Summary:1,208,099. Precipitating fat from whey. E. C. SWANSON. 1 July, 1969 [1 July, 1968], No. 33150/69. Heading C5C. [Also in Division C3] Dissolved lipids are removed from aqueous whey by adding divalent ion of a metal of Groups I, II, IV, VI or VIII to the whey which contains said divalent metal in a concentration of less than 0À0750 molal, adjusting the pH to 6-8À5 at below 140‹ F. and separating the resulting lipid-containing precipitate. The divalent metal ion may be Cu, Mg, Ca, Sr, Ba, Zn, Cd, Sn, Pb, Fe, Co or Ni. The pH adjustment may be made before or after divalent metal ion addition. The aqueous whey may contain protein, lactose or both. Cheese whey may first be clarified to remove suspended material.
