Summary: | FIELD: food industry. SUBSTANCE: in a method of preparing food additive containing beta-carotene, alpha-tocopherol, and/or other hydrophobic compounds, and also different modifications of lecithin and pectin, oil phase is dispersed in pectin solution to form stable concentrated emulsion wherein pectin at its ratio to oil phase (1-50):1 is used as emulsifier for oil-in-water disperse system, after which system is dehydrated.
