Summary: | FIELD: food industry. SUBSTANCE: meet raw is milled and mixed with solution containing salting components and enzyme preparation pepsin (swine of beef). Fat component amount is calculated from condition that mass part of these fatty acids is 19.0-22.0% to connective-tissue proteins of raw to be treated.
