Summary: | The invention relates to a process for preparing a food product of high nutritive value and antioxidant capacity, such as croquettes fortified with a functional ingredient. According to the invention, the process consists of the following steps: dehydrating the waste elderberries (Sambucus Nigra L.) by freeze-drying, grinding them to obtain a powder of functional ingredient having a moisture content of 8% at the most, a total fibers content of at least 45% and an antioxidant capacity of at least 9.50 mg Trolox/g, preparing and dosing the natural sour dough, preparing a dough from whole wheat flour, white wheat flour of 650 type, waste elderberries as powder, fermented dairy product of Sana type with a content of 3.5% fat, butter of 65% fat, natural sour dough, eggs, a mix of seeds, sugar, sea salt, kneading the dough and keeping it in refrigeration conditions, moulding and baking the dough for 27...28 min at a temperature of 180°C, to result in a finished product, such as croquettes fortified with waste elderberries as powder, having an energy value of 407 kcal/100 g.
Invenţia se referă la un procedeu de obţinere a unui produs alimentar cu valoare nutritivă ridicată şi capacitate antioxidantă de tip crochete fortifiate cu un ingredient funcţional. Procedeul, conform invenţiei, constă în etapele: deshidratare prin liofilizare a deşeurilor din fructe de soc (Sambucus Nigra L.,), măcinare pănă la obţinerea unei pulberi de ingredient funcţional având o umiditate de maximum 8%, un conţinut de fibre totale de minimum 45% şi o capacitate antioxidantă de minimum 9,50 mg Trolox/g, preparare şi dozare maia naturală, prepare aluat din făină integrală de grâu, făină albă de grâu tip 650, pulbere din deşeuri de fructe de soc, produs lactat de tip sana cu 3,5% grăsime, unt cu 65% grăsime, maia naturală, ouă, amestec de seminţe, zahăr, sare de mare, frământare aluat cu menţinere în condiţii de refrigerare, modelare aluat cu coacere timp de 27...28 min la temperatura de 180°C, rezultând un produs finit de tip crochete fortifiate cu pulbere din deşeuri de fructe de soc având o valoare energetică de 407 kcal/100 g. |
