The invention relates to a dough composition for bakery products as white bread, roll with seeds or thin roll with poppy seeds, intended for the prevention and diet-therapy of iron deficiency. According to the invention, the composition comprises, depending on the assortment, 44...62% white flour of the 650 type, up to 12% brown flour of the 1250 type, 24...37% water, 1.5...2.8% compressed yeast, 7...9% sugar, 2.8...3% margarine, 2.8...3% sunflower oil, 1...1.2% powder milk, 0.5...0.7% integral egg powder, 0.35...0.90 salt, 0.040...0.060% rum flavour, 0.004...0.006% standardized fungic phytase, 0.012...0.015% ascorbic acid, 3.1...3.3% sunflower seeds, 3.8...4% sesame seeds, 0.6...0.8% poppy seeds and 0.010...0.027% iron-containing fortifying agent selected from ferrous sulphate, ferrous lactate or ferrous gluconate, the percentage being expressed by weight. Invenţia se referă la o compoziţie de aluat pentru produse de panificaţie, sub formă de pâine albă, chiflă cu seminţe sau baton cu mac, destinate prevenirii şi dietoterapiei carenţelor de fier. Compoziţia conform invenţiei cuprinde, în funcţie de sortiment, 44...62% făină albă tip 650, până la 12% făină neagră tip 1250, 24...37% apă, 1,5...2,8% drojdie comprimată, 7...9% zahăr, 2,8...3% margarină, 2,8...3% ulei de floarea soarelui, 1...1,2% lapte praf, 0,5...0,7% praf de ou integral, 0,35...0,90 sare, 0,040...0,060% esenţă de rom, 0,004...0,006 fitază fungică standardizată, 0,012...0,015% acid ascorbic, 3,1...3,3% seminţe de floarea soarelui, 3,8...4% seminţe de susan, 0,6...0,8% seminţe de mac şi 0,010...0,027% agent de fortifiere cu fier, selectat dintre sulfat feros, lactat feros sau gluconat feros, procentele fiind exprimate în greutate.
