Summary:A fractionation method to separate β-lactoglobulin and α-lacalbumin from whey, comprising adding to whey protein solution carbonate ions or hydrogen carbonate ions, optionally along with light metal ions or transition metal ions, such that the complexed β-lactoglobulin can be separated from α-lacalbumin by a membrane with a fractionation molecular weight of 50,000 or less, or 300,000 or less in the presence of additional metal ions, and α-lacalbumin in the filtrate is further separated with a membrane of 14,000 or less.
