Summary: | Food composition in the form of an oil-in-water emulsion comprising water, a first acidulant selected from the group consisting of lactic acid, benzoic acid, acetic acid, sorbic acid and mixtures thereof, structurant, selected from the group consisting of starch, flour, gum, fiber and mixtures thereof, 5 to 60 wt% of vegetable oil, non-soy plant protein having an average particle size of below 100 micrometers, and a second acidulant, having a pKa of 3.2 or lower, wherein the weight ratio between plant protein and vegetable oil is ⥠0.3, and wherein the pH of the composition is of between 2.5 and 4.5.
Una composición alimenticia en la forma de una emulsión de aceite en agua que comprende agua, un primer acidulante seleccionado del grupo que consiste de ácido láctico, ácido benzoico, ácido acético, ácido sórbico y mezclas de los mismos, agente estructurante, seleccionado del grupo que consiste de almidón, harina, goma, fibra y mezclas de los mismos, 5 a 60% en peso de aceite vegetal, proteína vegetal que no es soya que tiene un tamaño de partícula promedio abajo de 100 micrómetros, y un segundo acidulante, que tiene un pKa de 3.2 o menos, en donde la proporción en peso entre la proteína vegetal y el aceite vegetal es = 0.3, y en donde el pH de la composición es de entre 2.5 y 4.5. |
