Summary:The present compositions and methods relate to thermostabilization of phytase with inorganic phosphate and increasing the recovery of phytase during the production of heat-treated food or animal feed pellets that contain phytase. The phosphate is introduced to the solid composition. The phosphate and phytase are in functional proximity and at a molar ratio of at least 50:1. Multi-layered granules are taught. Las presentes composiciones y métodos se refieren a la termoestabilización de una fitasa con fosfato inorgánico y al aumento de la recuperación de fitasa durante la producción de pelotillas de alimentos o piensos para animales tratados con calor que contienen fitasa. El fosfato se introduce en la composición sólida. El fosfato y la fitasa se encuentran en proximidad funcional y a una relación molar de al menos 50:1. Se enseñan gránulos multicapa.
