Summary:The present invention has the objective to provide a stable gas-in-oil-in-water emulsion. Such emulsions can be used as food products, for example as a mayonnaise or salad dressing. This objective has been achieved by a gas-in-oil-in-water emulsion, which is prepared by combining a mixture of sucrose fatty acid ester in water, with an aerated oil containing sucrose fatty acid ester. The aerated oil is dispersed in the aqueous phase, to a product containing oil droplets containing gas bubbles in a continuous aqueous phase. A gas-in-oil-in-water emulsion has been developed which is stable against oil exudation, phase separation and phase inversion for at least two months. La presente invención tiene el objetivo de proveer una emulsión estable de gas en aceite en agua. Dichas emulsiones pueden ser empleadas como productos alimenticios, por ejemplo como una mayonesa o como un aderezo para ensalada. Se logró este objetivo a través de una emulsión de gas en aceite en agua que se prepara combinando una mezcla de éster de ácido graso de sacarosa en agua, con un aceite aireado que contiene éster de ácido graso de sacarosa. El aceite aireado es dispersado en la fase acuosa, en un producto que contiene pequeñas gotas de aceite que contienen a su vez burbujas de gas en una fase acuosa continua. Se desarrolló una emulsión de gas en aceite en agua que es estable ante la exudación de aceite, la separación en fases y la inversión de fases durante al menos dos meses.
