Summary:The present disclosure is related to the production of fructose syrups and fructooligosaccharides by hydrolysis of any source of fructans using an enzymatic extract containing ß-fructofuranosidases obtained in a native way from the Aspergillus Kawachii fungus or recombinantly by cloning the respective gene of pichia pastoris X33. The characteristic details of this invention of a ß-fructofuranosidase in a native manner in the fungus ß-fructofuranosidase, a process for obtaining a recombinant ß-fructofuranosidase in the pichia pastoris X33 yeast, a method to formulate a substrate for an enzymatic hydrolysis reaction, a production process of fructose syrup by enzymatic hydrolysis from any source of fructans using ß-fructofuranosidase obtained from the Aspergillus Kawachii fungi in wild or recombinant form and a production process of fructooligosaccharides from any fructans source using ß-fructofuranosidase obtained from the Aspergillus Kawachii fungi in wild or recombinant form. La presente invención se refiere a la producción de jarabes fructosados y fructooligosacáridos por hidrolisis de cualquier fuente de fructanos empleando un extracto enzimático conteniendo ß-fructofuranosidasas obtenidas en forma nativa a partir del hongo Aspergillus Kawachii o de manera recombinante mediante la clonación del gen respectivo en pichia pastoris X33. Los detalles característicos de esta invención de una ß-fructofuranosidasa de manera nativa en el hongo ß-fructofuranosidasa, un proceso de obtención de una ß-fructofuranosidasa recombinante en la levadura pichia pastoris X33, un método para formular un substrato para una reacción enzimática de hidrolisis, un proceso de producción de jarabe fructosado mediante hidrolisis enzimática a partir de cualquier fuente de fructanos empleando ß-fructofuranosidasa obtenidas a partir del hongo Aspergillus Kawachii en forma silvestre o recombinante y un proceso de producción de fructooligosacaridos a partir de cualquier fuente de fructanos empleando ß-fructofuranosidasa obtenidas a partir del hongo Aspergillus Kawachii en forma silvestre o recombinante.
