Abstract The present invention describes a method for manufacturing a 100% malting maize beer, which maintains the sensorial characteristics in beers of maize, of the red and blue variety, for at least six months, also obtaining a beer suitable for people suffering from gluten intolerance. La presente invención describe en un método de elaboración de cerveza 100% de maíz malteado que logre mantener las características sensoriales en las cervezas propias del maíz de las variedades rojo y azul por un mínimo de seis meses, además logrando obtener una cerveza apta para personas que sufren intolerancia al gluten.
