Summary: | 1. A composition, which is an anthocyanin-based colorant composition comprising 50-90 mol-%, based on the total amount of anthocyanins, of pelargonidin-based anthocyanins, and wherein (i) > 70 mol-% of all anthocyanins are acylated with at least one phenolic acid; and (ii) > 20 mol-% of all anthocyanins are acylated with at least one hydroxycinnamic acid; and wherein the composition has a red color with a hue value H ⥠in the L*C*h* color system in the range of 10-30, measured at an L*-value of (70.0 ± 0.1) in a 0.1 mol/l trisodium citrate dihydrate buffer at pH 3 in a 1 cm-length quartz cell using Spectraflash 650 (Datacolor) in transmission mode under D65 illuminant 10 Deg. Also, the present invention relates to use of the above compositions as a food colorant.
Una composición, que es una composición colorante a base de antocianina que comprende el 50-90 % molar, basado en la cantidad total de antocianinas, de antocianinas a base de pelargonidina, y en la que (i) > 70 % molar de todas las antocianinas están aciladas con al menos un ácido fenólico; y (ii) > 20 % molar de todas las antocianinas están aciladas con al menos un ácido hidroxicinámico; y en donde la composición tiene un color rojo con un valor de tono H en el sistema de color L* C* h en el intervalo de 10-30, medido a un valor de L* de (70,0 ± 0,1) en un tampón de citrato trisódico dihidratado 0,1 mol/l a pH 3 en una célula de cuarzo con una longitud de 1 cm usando un Spectraflash 650 (Datacolor) en modo de transmisión con el iluminante D65 10 Deg. Además, la presente invención se refiere al uso de las composiciones anteriores como colorante alimentario. |
