Un proceso para acidificar un producto alimenticio. El proceso puede incluir proporcionar un producto alimenticio con un pH inicial, añadir un primer ácido al producto alimenticio para ajustar el pH inicial del producto alimenticio a un pH intermedio del producto alimenticio, añadir un segundo ácido al producto alimenticio para ajustar el pH intermedio del producto alimenticio a un pH final del producto alimenticio, en donde se produce un producto alimenticio acidificado que tiene el pH final.
