La presente invención es relativa a un proceso para la obtención de quitosano a partir de exoesqueletos de camarón, caracterizado porque comprende las siguientes etapas: a) recolección de exoesqueletos de camarón no cocidos obtenidos en restaurantes de mariscos, b) secado, pulverización y tamizado, c) desmineralización con HCl, d) desproteinización con NaOH, y e) desacetilación con NaOH.
