Summary: | The invention relates to the wine-making industry, namely to a process for producing red wine.The process, according to the invention, comprises crushing of grapes with destemming, obtaining of squash, administration in the squash of young press wine, produced upon processing of another batch of grapes and chemically deoxidized to the pH of 3.6...4.0, maceration-fermentation of the mixture, draining and pressing of the drained pomace with the production of young free-running wine, which is directed to secondary fermentation and storage, and of young press wine, intended for administration in the squash upon processing of other batches of grapes.
Invenţia se referă la industria vinicolă, şi anume la un procedeu de fabricare a vinului roşu.Procedeul, conform invenţiei, include zdrobirea strugurilor cu desciorchinare, obţinerea mustuielii, administrarea în mustuială a vinului tânăr de presă obţinut la prelucrarea altei partide de struguri şi dezacidifiat chimic până la pH-ul de 3,6...4,0, macerarea-fermentarea amestecului, scurgerea şi presarea boştinei cu obţinerea vinului tânăr - ravac, care este dirijat la postfermentare şi păstrare, şi a vinului tânăr de presă, destinat pentru administrare în mustuială la prelucrarea altor partide de struguri.
Изобретение относится к винодельческой промышленности, а именно к способу производства красного вина.Способ, согласно изобретению, включает дробление винограда с гребнеотделением, получение мезги, внесение в мезгу молодого прессового вина, полученного при переработке другой партии винограда и химически раскисленного до рН 3,6...4,0, настаивание-брожение смеси, стекание и прессование стекшей мезги с получением молодого вина-самотека, которое направляют на дображивание и хранение, и молодого прессового вина, предназначенного для внесения в мезгу при переработке других партий винограда. |
