Summary:The invention relates to the alcohol industry, namely to processes for oxygenating distillates in the process of their maturation in large sealed tanks.The process for oxygenating a distillate during its maturation in a tank in the presence of oak staves, according to the invention, comprises introduction, by hydrodynamic homogenization, of gaseous oxygen into the recirculation flow of a part of the distillate until an opalescent emulsion is obtained, which is returned into the tank under the oak staves; at the same time, the oxygen is introduced in an amount of 50-100 mg/dm3, and the recirculation flow of distillate is 20-50% of its total volume. Invenţia se referă la industria produselor alcoolice, şi anume la procedee de oxigenare a distilatelor în procesul maturarii acestora în vase ermetice mari.Procedeul de oxigenare a distilatului alcoolic la maturarea acestuia într-un rezervor în prezenţa doagelor de stejar, conform invenţiei, include administrarea, prin omogenizare hidrodinamică, a oxigenului gazos în fluxul recirculant a unei părţi de distilat, până la obţinerea unei emulsii opalescente, care se întoarce în rezervor sub doagele de stejar; totodată oxigenul se administrează în cantitate de 50-100 mg/dm3, iar fluxul recirculant de distilat constituie 20-50% din volumul total al acestuia. Изобретение относится к алкогольной промышленности, а именно к способам оксигенации дистиллятов в процессе их созревания в больших герметичных емкостях.Способ оксигенации дистиллята при его созревании в емкости в присутствии дубовой клепки, согласно изобретению, включает введение, путем гидродинамической гомогенизации, газообразного кислорода в рециркуляционный поток части дистиллята, до получения опалесцирующей эмульсии, которая возвращается в емкость под дубовые клепки; при этом кислород вводят в количестве 50-100 мг/дм3, а рециркуляционный поток дистиллята составляет 20-50% от его общего объема.
