The invention relates to the alcohol industry, in particular to the production of aged alcoholic products, namely to a method for maturation of alcoholic distillate.The method, according to the invention, provides for the preliminary enrichment of the young distillate with extractive substances of oak wood, subsequent maturation of the distillate in the presence of crushed oak wood, periodically suspended in the volume of the distillate, periodic mixing and oxygenation of the distillate, at the same time oxygenation is carried out by introducing gaseous oxygen in an amount that ensures partial flotation of the crushed oak wood on the surface of the distillate. Invenţia se referă la industria alcoolului, în special la fabricarea produselor alcoolice învechite, şi anume la un procedeu de învechire a distilatului alcoolic.Procedeul, conform invenţiei, prevede îmbogăţirea preliminară a distilatului crud cu substanţe extractive ale lemnului de stejar, maturarea ulterioară a distilatului în prezenţa lemnului de stejar mărunţit, periodic suspendat în volumul distilatului, omogenizarea şi oxigenarea periodică a distilatului, totodată oxigenarea se efectuează prin administrarea oxigenului gazos într-o cantitate care asigură flotarea parţială a lemnului de stejar mărunţit la suprafaţa distilatului. Изобретение относится к алкогольной промышленности, в частности к производству выдержанной алкогольной продукции, а именно к способу созревания спиртового дистиллята.Способ, согласно изобретению, предусматривает предварительное обогащение молодого дистиллята экстрактивными веществами древесины дуба, последующую выдержку дистиллята в присутствии измельченной древесины дуба периодически взвешенной в объеме дистиллята, периодические перемешивание и оксигенацию дистиллята, при этом оксигенацию проводят путем введения газообразного кислорода в количестве обеспечивающем частичную флотацию измельченной древесины дуба на поверхность дистиллята.
