Summary:The invention relates to biotechnology, in particular to a process for producing dry bacterial leaven for the production of fermented milk products.The process, according to the invention, provides for the cultivation of a mixture of Streptococcus thermophilus CNMN LB-53 and Streptococcus thermophilus CNMN LB-54 strains, separation of the bacterial biomass from the nutrient medium, mixing thereof with a protective medium, congelation of the mixture and drying by lyophilization, at the same time the protective medium comprises skimmed milk, glycerol, sucrose, sodium citrate and gelatin. Invenţia se referă la biotehnologie, şi anume la un procedeu de obţinere a maielei bacteriene uscate pentru fabricarea produselor lactate fermentate.Procedeul, conform invenţiei, prevede cultivarea unui amestec de tulpini Streptococcus thermophilus CNMN LB-53 şi Streptococcus thermophilus CNMN LB-54, separarea biomasei bacteriene de mediul nutritiv, amestecarea acesteia cu un mediu de protecţie, congelarea amestecului şi uscarea prin liofilizare, totodată mediul de protecţie conţine: lapte degresat, glicerol, zaharoză, citrat de sodiu şi gelatină. Изобретение относится к биотехнологии, а именно к способу получения сухой бактериальной закваски для производства кисломолочных продуктов.Способ, согласно изобретению, предусматривает культивирование смеси штаммов Streptococcus thermophilus CNMN LB-53 и Streptococcus thermophilus CNMN LB-54, отделение бактериальной биомассы от питательной среды, ее смешивание с защитной средой, замораживание смеси и сушку путем лиофилизации, при этом защитная среда содержит обезжиренное молоко, глицерин, сахарозу, цитрат натрия и желатин.
