Summary:A cyclomaltodextrin gluconotransferase (CGTase) with heat tolerance is prepd. by (a) fermenting Bacillus stearothermophilus KCTC 8495P at 55 deg.C and pH 7.0 in the medium contg. soluble starch as a carbon source, non-fat soybean residue, NaH2PO42H2O and CaCl2, (b) centrifuging the fermented broth to obtain the supernatant, (c) purifying the supernatant by salting-out with ammonium sulfate and affinity chromatography, and (d) dialysing the obtd. soln in the D.W.. The obtd. CGTase is useful for producing cyclodextrin cpds. from starch.
