The invention relates to a process for producing taurine from O-acetyl-L-serine (OAS) by way of biotransformation. In a first process step (biotransformation 1), L-cysteic acid is produced from O-acetyl-L-serine (OAS) using an enzyme selected from the group of OAS sulfhydrylases (EC 4.2.99.8) in the presence of a sulfurous acid salt and subsequently, in a second process step (biotransformation 2), L-cysteic acid is decarboxylated to form taurine. This type of biotransformation provides taurine. |
