Summary:An apparatus and method for evaluating the grade of livestock products are presented. The apparatus includes: a photographing device for photographing a cross-section of the livestock products; and an arithmetic device that generates a candidate photographing image by combining a plurality of partial photographing images generated by the photographing device, and determines the grade of the livestock products based on a final photographing image that is one of the candidate photographing images. 축산물 등급 평가 장치 및 방법을 제시하며, 축산물 등급 평가 장치는 축산물의 단면을 촬영하는 촬영장치; 및 상기 촬영장치에서 생성된 복수의 부분촬영이미지를 합성하여 후보촬영이미지를 생성하고, 상기 후보촬영이미지 중 어느 하나인 최종촬영이미지에 기초하여 상기 축산물의 등급을 판정하는 연산장치를 포함한다.
