The present invention relates to a steam generation and supply device for a cooking appliance, which generates steam by heating water with combusted high-temperature gas heat, and supplies the steam to a cooking appliance, which is used for cooking food in cafeterias of schools, military bases, companies, etc., for group catering. More specifically, the steam generation and supply device for a cooking appliance comprises: a water tank which has a water storage space formed therein, a water supply part for supplying water to the water storage space and a water drainage part for discharging water, which are formed at a lower portion thereof, and a first steam exhaust part, a gas supply part, and a gas exhaust part which are respectively formed on an upper portion thereof and are connected to the water storage space and the cooking appliance; a heating container which is installed in the water storage space and connected to the gas supply part and the gas exhaust part; and an ignition member which is installed in the gas supply part to receive gas, and ignites the gas inside the heating container. The heating container generates steam by heating water with the combusted high-temperature gas heat. While moving the high-temperature gas combusted by ignition to the gas exhaust part, and the steam is discharged from the first steam exhaust part and supplied to the cooking appliance. 본 발명은 연소된 고온의 가스의 열로 물을 가열시켜 스팀을 발생시키고, 그 스팀을 단체 급식을 위해 학교, 군부대, 회사 등의 식당에서 음식물을 조리하는데 사용되는 조리기에 공급해주는 조리기용 스팀 발생 및 공급장치에 관한 것으로써, 더욱 상세하게는, 내부에 물 저장공간이 형성되고, 물 저장공간에 물을 공급해주는 물 공급부와 물이 배출되는 물 배수부가 하부에 각각 형성되며, 물 저장공간과 조리기와 연결되는 제1스팀 배기부 및 가스 공급부 및 가스 배기부가 상부에 각각 형성된 물 탱크와; 물 저장공간에 설치되어 가스 공급부와 가스 배기부와 연결되는 가열통과; 가스 공급부에 설치되어 가스를 공급받으며, 가스를 가열통의 내부에서 점화시키는 점화부재를 포함하며, 가열통은 점화에 의해 연소된 고온의 가스를 가스 배기부로 이동시켜주면서, 연소된 고온의 가스 열로 물을 가열하여 스팀을 발생시켜주며, 스팀은 제1스팀 배기부에서 배출되어 조리기에 공급되는 것을 특징으로 하는 조리기용 스팀 발생 및 공급장치에 관한 것이다.
