Summary: | Disclosed are castella using a deodeok extract and rice and a manufacturing method thereof. According to a preferred embodiment of the present invention, the manufacturing method comprises the steps of: preparing a mixture 1 by mixing eggs, sugar, salt, trehalose, trimoline, and a deodeok extract; double boiling the prepared mixture 1; creating foam in the double boiled mixture 1; preparing a mixture 3 by mixing a mixture 2 which is a mixture of nonglutinous rice flour and baking powder with the mixture 1 in which foam is created; preparing a mixture 4 by mixing a melted butter solution with the mixture 3; and putting the mixture 4 in a castella mold and baking in an oven. According to the present invention, castella can be manufactured by extracting and using active ingredients of deodeok without using organic solvents. In addition, castella with excellent nutritional value can be manufactured by reducing the unique scent of deodeok and utilizing the active ingredients well.
더덕 추출물과 쌀을 이용한 카스텔라 및 그 제조 방법이 개시된다. 본 발명의 바람직한 일 실시예에 따르면, 계란, 설탕, 소금. 트레할로오스, 트리몰린 및 더덕 추출물을 혼합하여 혼합물1을 제조하고, 제조된 혼합물1을 중탕하여, 중탕한 혼합물1에 거품을 생성하고, 품이 생성된 혼합물1에 멥쌀가루와 베이킹 파우더의 혼합물인 혼합물2를 혼합하여 혼합물3을 제조하여, 혼합물3에 녹은 버터용액을 혼합하여 혼합물4를 제조하고, 카스텔라 틀에 혼합물 4를 넣고 오븐에 굽는다. 본 발명에 따르면, 유기 용매를 사용하지 않고도 더덕의 유효 성분을 추출하여 이를 이용하여 카스텔라를 제조하는 것이 가능하게 되고, 더덕 특유의 향기는 줄이면서도 유효 성분과 잘 활용하여 영양학적으로 우수한 카스텔라를 제조할 수 있는 장점이 있다. |
