미립을 저류하는 것이 가능한 저류 탱크와, 복수의 연삭 롤과, 상기 저류 탱크로부터 미립의 공급을 받아 연삭 롤에 의한 미립의 정미가 실시되는 정백부와, 상기 정백부로부터 배출된 정백미를 상기 저류 탱크로 양송 가능한 양곡부를 적어도 갖고, 미립을 상기 정백부에 복수회 통과시키는 것이 가능한 주조용 정미 장치로서, 정백미의 복수 종류의 정미 형상으로부터 소정의 정미 형상을 선택 가능한 제어부를 갖고, 상기 제어부는, 선택된 상기 소정의 정미 형상에 대응하여, 복수의 상기 연삭 롤 중 하나의 연삭 롤을 사용하여 상기 정백부에 있어서의 미립의 정미를 실시하게 한다. This rice-polishing apparatus for use in brewing rice wine at least comprises: a retainer tank capable of retaining rice grains therein; a plurality of grinding rolls; a polishing unit which, upon receipt of rice grains from the retainer tank, performs polishing on the rice grains with the grinding rolls; and a grain lifting unit which is capable of lifting the polished rice grains discharged from the polishing unit and delivering same to the retainer tank. The rice-polishing apparatus also allows rice grains to pass multiple times through the polishing unit. The rice-polishing apparatus further includes a control unit capable of selecting a prescribed shape of polished grains from among multiple shapes of polished grains, and, according to the prescribed polished grain shape thus selected, the control unit causes the polishing unit to perform polishing on rice grains using one of the plurality of grinding rolls.
