Abstract | The present invention relates to a method for manufacturing Carthamus tinctorius L. grain syrup, which is rich in functional ingredients and provides physiological activity, and Carthamus tinctorius L. grain syrup manufactured thereby. According to the present invention, the method comprises the following steps: adding water to a mixture of Carthamus tinctorius L. leaf powder, fig leaves, sweet potato shoots, green tea leaves, and Glycyrrhiza uralensis, and performing extraction and filtration to prepare a mixed Carthamus tinctorius L. leaf extract; mixing the prepared Carthamus tinctorius L. leaf extract, rice flour, water, and liquefying enzymes and settling and heating the mixture to liquefy the mixture; adding malt powder to the filtrate acquired by filtering the liquefied liquid to perform saccharification; and mixing Carthamus tinctorius L. leaf powder, green tea powder, beet powder, and white lotus root powder in the filtrate acquired by filtering the saccharified liquid, and concentrating the mixture to manufacture grain syrup.
