According to the present invention, bread having enhanced dietary fiber whose taste and flavor are improved and functionality and preference are high can be provided. 본 발명은 효모 스타터를 이용한 빵의 제조방법에 관한 것으로서, 상세하게는 밀종 또는 호밀종 첨가에 따른 식빵의 품질 특성을 확인하였으며, 밀기울을 첨가하여 식이섬유를 강화한 건강빵을 제조하여 품질 특성을 확인하였다. 본 발명에 따르면, 맛과 풍미를 향상시키고, 기능성 및 기호성이 높은 식이섬유가 강화된 빵을 제공할 수 있다.
