Summary: | The present invention provides a meat additive and a pickle liquid, wherein water retaining abilities are enhanced at the time of heating a processed meat product, and a processed meat product having an excellent texture can be produced. According to the present invention, provided are a meat additive containing at least water-soluble cellulose ether which is gelled by heat; a pickle liquid containing the meat additive; and a processed meat product including the meat additive. In addition, provided is a method for producing a processed meat product, wherein the method comprises the steps of: adding the meat additive or the pickle liquid to meat; and heating the meat to which the meat additive or the pickle liquid has been added to a temperature higher than the temperature at which the water-soluble cellulose contained in the meat additive or the pickle liquid is gelled.
본 발명은 식육 가공품 가열시의 보수 능력을 높이고, 식감이 우수한 식육 가공품 제조를 위한 식육 첨가제 및 피클액을 제공한다. 본 발명에 따르면, 열로 겔화하는 수용성 셀룰로오스에테르를 적어도 함유하는 식육 첨가제, 이 식육 첨가제를 함유하는 피클액 및 이 식육 첨가제를 포함하여 이루어지는 식육 가공품을 제공한다. 또한, 상기 식육 첨가제 또는 상기 피클액을 식육에 첨가하는 공정과, 상기 식육 첨가제 또는 상기 피클액이 첨가된 식육을 상기 식육 첨가제 또는 상기 피클액에 함유되는 수용성 셀룰로오스가 겔화하는 온도 이상으로 가열하는 공정을 적어도 포함하여 이루어지는 식육 가공품의 제조 방법을 제공한다. |
