Summary: | The present invention relates to a heat exchanging method of tap water, and a heat exchanger. Provided is a heat exchanging method of tap water using a heat exchanger. According to the present invention, the tap water has a residual chlorine content of 2 ppm or more. The heat exchanger comprises: a plurality of hot plates including ferritic stainless steel; and copper brazing for bonding between the hot plates. The ferritic stainless steel contains less than 0.5 wt% of nickel, 0.1 to 2 wt% of copper, and 0.03 wt% or less of carbon.
