Summary:The present invention relates to a vegetable salting device. According to an embodiment of the present invention, the vegetable salting device comprises a structure which comprises a heating part and a cooling part surrounding a salting space in a salting main body part; and a sampling part for controlling salinity of salt water contained in the salting space. Accordingly, the optimal temperature condition and salting condition for osmotic pressure are provided to promote a salting process. 본 발명은 채소절임장치에 관한 것으로, 본 발명의 실시예에 의하면, 절임본체부에 절임공간을 둘러싸도록 히팅부와 쿨링부가 구비되며 절임공간 내측에 담긴 염수의 염도를 제어하는 샘플링부가 구비되는 구조에 의해, 삼투압이 일어나기 위한 최적의 온도조건 및 염도조건을 제공함으로써 절임공정을 촉진시킬 수 있는 효과가 있다.
