Summary: | The present invention provides a complex-fermented composition of Fabaton soybean leaves and Schisandra chinensis which is prepared by complex-fermenting a mixture of Fabaton soybean leaves and Schisandra chinensis with a specific complex seed to enhance a digestive enzyme inhibitory activity, aglycone isoflavone, omega-6 fatty acid and antioxidant activity and enhance food processability (flavor, flavor, color), as well as a preparation method thereof. The Fabaton soybean leaves and Schisandra chinensis according to the present invention show a remarkable enhancement in an alpha-glucosidase inhibitory activity and a pancreatic lipase inhibitory activity to achieve an excellent effect of ameliorating diabetes and obesity, and also show an improvement in unique flavor and taste of Fabaton soybean leaves to achieve excellent palatability. In addition, the complex-fermented composition of Fabaton soybean leaves and Schisandra chinensis according to the present invention shows reinforcement in anti-diabetic and anti-obesity activities, antioxidant activity, omega-6 fatty acids, total phenolics and total flavonoids, and aglycone isoflavone derivatives, so that the composition can be valuably used as a food for ameliorating diabetes and obesity and a food for ameliorating metabolic syndrome and menopausal syndrome.
