본 발명의 식품 유지 장치는, 유동성을 가지는 식재료를 유지 또는 해방 가능한 식품 유지 장치이다. 식품 유지 장치는, 베이스와, 상기 베이스에 연결된 로봇암과, 상기 로봇암의 선단에 설치된 엔드 이펙터와, 상기 로봇암 및 상기 엔드 이펙터의 동작을 제어하는 제어 장치를 구비한다. 상기 엔드 이펙터는, 베이스부와, 적어도 하나의 로봇암의 자세에서 수평 방향에 평행한 회전축을 가지는 회전 관절과, 상기 회전 관절에 의해 상기 베이스부에 대해 회동 가능하게 연결된 회동부와, 상기 회동부에 장착되고 오목부를 구비하는 선단부를 구비한다. 상기 제어 장치는, 소정의 기준 상태에 있는 상기 선단부의 상기 회전 관절을 정회전 동작시킴으로써 소정의 용기에 수용된 상기 식재료의 일부를 상기 오목부의 내부에 유지하고, 상기 선단부의 상기 회전 관절을 역회전 동작시킴으로써, 상기 오목부의 내부에 유지된 상기 식재료를 해방시킨다. A food holding apparatus configured to hold and release an ingredient having fluidity, including: a base; robot arm coupled to the base; end effector at a tip end of the arm; and controller configured to control an operation of the arm and of the end effector. The end effector includes: a base portion; rotational joint having a rotation axis parallel to a horizontal direction in at least one of postures of the arm; rotary portion rotatably coupled to the base portion by the rotational joint; and a tip end portion attached to the rotary portion and including a concave portion. The controller makes the rotational joint of the tip end portion in a predetermined reference state normally rotate to hold part of the ingredient, stored in a predetermined container, inside the concave portion, and makes the rotational joint of the tip end portion reversely rotate to release the ingredient.
