Summary:The present invention relates to a method of producing crocetin, the method comprising the steps of: (a) preparing an aqueous solution by mixing saffran, gardenia extract powder, or concentrate with purified water; (b) introducing alpha-galactosidase into the aqueous solution in the step (a) and agitating while heating the same; (c) cooling the aqueous solution in the step (b) to room temperature; (d) extracting precipitates by centrifuging or filtering the aqueous solution in the step (c); (e) drying extracts obtained in the step (d); (f) adding the extracts in the step (e) to an aqueous alkaline sodium bicarbonate solution and agitating while heating the same; (g) turning supernatant that remains after filtering the aqueous solution in the step (f) acidic by adding an acid thereto, and agitating the same while heating; (h) cooling the aqueous solution in the step (g) to room temperature; (i) extracting precipitates by centrifuging or filtering the aqueous solution in the step (h); and (j) drying extracts in the step (i). According to the present invention, crocetin can be easily obtained in a large quantity. 크로세틴 제조방법으로서, (a) 사프란 또는 치자 추출물 분말 또는 농축액에 정제수를 혼합하여 수용액을 만드는 단계; (b) 상기 (a) 단계에 의한 수용액에 알파-갈락토시다아제를 투여한 후 교반가열하는 단계; (c) 상기 (b) 단계에 의한 수용액을 상온으로 냉각시키는 단계; (d) 상기 (c) 단계에 의한 수용액을 원심분리하거나 여과하여 침전물을 추출하는 단계; (e) 상기 (d) 단계에서 얻어진 추출물을 건조시키는 단계; (f) 상기 (e) 단계에 의한 추출물을 알카리성 탄산수소나트륨 수용액에 넣고 교반가열하는 단계; (g) 상기 (f) 단계에 의한 수용액을 여과하고 남은 여액에 산을 첨가하여 산성으로 만든 후 교반가열하는 단계; (h) 상기 (g) 단계에 의한 수용액을 상온으로 냉각시키는 단계; (i) 상기 (h) 단계에 의한 수용액을 원심분리하거나 여과하여 침전물을 추출하는 단계; 및 (j) 상기 (i) 단계에 의한 추출물을 건조시키는 단계;를 포함함으로써, 다량의 크로세틴을 용이하게 얻을 수 있게 된다.
