Summary:The present invention relates to a fermented liquid comprising a mixed extract, a method for manufacturing the same, a health functional food composition and a food additive comprising the same. For the mixed extract, 700-1,300 g of Smilax glabra, 200-400 g of Lonicera japonica, 50-200 g of Polygonatum odoratum, 100-300 g of mugwort, 100-300 g of Pueraria lobata, 100-300 g of jujube, 100-300 g of ginger tree, and 100-300 g of Ulmus davidiana are mixed and fermented by using 1-5 parts by weight of mono-sodium glutamate (MSG), a Bacillus subtilis HA (KCCM 10775P) strain, and a Lactobacillus plantarum EJ2014 (KCCM 11545P) strain. Accordingly, γ-polyglutamic acid (γ-PGA) and gamma-aminobutyric acid (GABA), which are viscous materials, are produced at high concentrations. The composite fermented liquid of the mixed extract exhibits an effect of protecting the liver from alcohol and thus can be used as a composition for alleviating hangover in an easy manner. 본 발명은 토복령 700 내지 1300 g, 인동 200 내지 400 g, 둥글레 50 내지 200 g, 쑥 100 내지 300 g, 칡 100 내지 300g, 대추 100 내지 300 g, 생강나무 100 내지 300g 및 느릅나무 100 내지 300 g의 혼합추출물을 모노소듐 글루타메이트(mono sodium glutamate; MSG) 1 내지 5 중량부, 바실러스 서브틸리스() HA(KCCM 10775P) 균주 및 락토바실러스 플란타럼() EJ2014(KCCM 11545P) 균주를 이용하여 혼합발효시킴으로써 점질물인 감마-폴리글루탐산(γ-polyglutamic acid, γ-PGA) 및 감마-아미노뷰티르산(gamma-aminobutyric acid; GABA)이 고농도로 생성된 혼합추출물의 복합발효액, 이의 제조방법, 이를 포함하는 건강기능식품 조성물 및 식품첨가제에 관한 것으로, 상기 혼합추출물의 복합발효액은 알코올로부터 간 보호 효과를 나타내므로 숙취개선용 조성물로 용이하게 활용될 수 있다.
