Summary: | The present invention relates to a method for manufacturing beef bone broth comprising the following steps: firstly removing blood from beef bones while performing aeration in an aeration tank; secondarily removing blood while performing aeration after removing blood from the aeration tank after the first blood removal; obtaining a first hot water extract by inserting beef bones to which the second blood removal has been performed in an extraction tank; obtaining a second hot water extract by inserting water into the beef bones from which the first hot water extract has been removed; performing oil separation by mixing the first and second hot extracts and transferring the same to an oil separation tank; concentrating the first and second hot extracts from which oil has been separated, increasing a temperature, and performing agitation and sterilization; homogenizing the hot water extract having been agitated and sterilized by passing the same through a homogenizer; and re-homogenizing the hot water extract by inserting salt into homogenized liquid and passing the homogenized liquid through the homogenizer when the refined salt is completely dissolved. The beef bone broth produced from the method has excellent appealability from having no off-taste or off-flavor, and has increased solid contents and optimized fat contents for excellent nutrition.
본 발명은 사골을 폭기조에서 폭기를 수행하면서 1차 제혈하는 단계; 1차 제혈된 폭기조에 핏물을 제거한 후, 폭기를 수행하면서 2차 제혈하는 단계; 2차 제혈이 완료된 사골을 추출탱크에 넣어 1차 열수추출액을 얻는 단계; 1차 열수추출액을 제거하고 난 사골에 물을 넣어 2차 열수추출액을 얻는 단계; 상기 1차 및 2차 열수추출액을 혼합하고, 유분리 탱크로 이송하여 유분리하는 단계; 유분리가 끝난 1차 및 2차 열수추출액을 농축하고, 승온하여 교반살균하는 단계; 교반살균된 열수추출맥을 균질기를 통과시켜 균질화하는 단계; 및 균질화된 균질액에 정제소금을 투입하고, 정제소금이 완전히 용해되면 균질기를 통과시켜 재차 균질화하는 단계를 포함하는 사골육수의 제조방법에 관한 것이다. |
