Summary:According to the present invention, only the rice bran composed of paraffin wax components is removed from nutritional brown rice, which is not welcome by customers due to bad taste arising from rough texture and bad digestion, and most of nutrition components of brown rice is contained, so embryo, which is the core of nutrition, is remaining without a loss, and thereby plentiful nutrition is provided and a polishing efficiency is improved. Further, manufacturing wash-free rice whose rice bran stuck on the surface of rice is completely removed to a state capable of performing cooking without washing, water is saved and sewage discharging is reduced, so water pollution is prevented. Therefore, a wash-free embryo-retaining polished rice containing resveratrol, which is a high functional nutrition component not included in nutrition components of rice, and complex zymogen to increase immunity is provided to promote national health. The method comprises the following steps: acquiring a fermented liquid containing a resveratrol component; manufacturing complex zymogen fermentation liquid; manufacturing wash-free embryo-retaining polished rice; and fermenting the wash-free embryo-retaining polished rice. 본 발명은 영양이 풍부한 현미의 식감이 거칠어 맛이 없고 소화가 불량하여 소비자들이 외면하고 있는 현미의 파라핀왁스 성분으로 형성된 미강(쌀겨)만 제거하고 현미의 영양성분 대부분을 함유하여 영양의 핵심인 배아(쌀눈)가 손실되지 않고 살아있게 하여 영양이 풍부하고 도정수율을 향상시키며, 쌀의 표면에 붙어 있는 미강(쌀겨)을 씻지 아니하고 취사를 할 수 있는 상태로 완전히 제거한 무세미로 제조하여 식수를 절약하고, 폐수방출을 감축시키므로 수질오염을 방지하며, 국민건강증진을 위하여 쌀의 영양성분에 함유되지 아니한 고기능 영양성분인 레스베라트롤과 면역력을 증진시켜 주는 복합발효균이 함유된 무세배아미 제조방법 및 그에 의한 레스베라트롤과 복합발효균이 함유된 무세배아미 제조에 관한 것이다.
