Abstract | The present invention provides a method for producing slowly digestible starch, and a food produced by using slowly digestible starch produced through the method. The method comprises the steps of: producing a recombinant vector including a maltose-binding-protein coding gene and a gene for coding a 4,6αGT, 4,6-α-glucanotransferase derived from Lactobacillus reuteri; transforming the produced recombinant vector to a colon bacillus; separating and refining maltose-binding-protein fused 4,6αGT, 4,6-α-glucanotransferase from the transformed colon bacillus; and reacting the refined maltose-binding-protein fused 4,6-α-glucanotransferase with starch.
