Summary:The present invention provides: a dough completed by adding and agitating kneading water decocted with Lentinus edodes in kneading ingredients prepared by mixing 20-50 g of Lentinus edodes powder dried from Lentinus edodes and pulverized to have a particle size of 0.3-1.5 mm, 150-200 g of egg, 30-50 g of olive oil, and 20-40 g of salt with respect to 10 kg of flour; meat juice in which the dough and Lentinus edodes are brewed; and a method for producing chopped noodles. Nelumbinis Semen or Angelica Utilis Makino may be further included in the kneading ingredients. 본 발명은; 밀가루 10kg에 대하여; 참송이 버섯을 건조한 후 입경이 0.3 ~ 1.5mm인 입자상으로 분쇄하여 준비 되는 참송이 버섯 분말 20 ~ 50g; 계란 150 ~ 200g; 올리브유 30 ~ 50g; 소금 20 ~ 40g을 혼합하여 준비되는 반죽 재료에 참송이 버섯을 달여 만든 반죽수를 첨가하면서 교반하여 완성되는 반죽 및 이 반죽과 참송이 버섯을 우려낸 육수, 칼국수의 제공방법을 제공한다. 상기 반죽재료에는 연자육 또는 함초를 더 포함할 수 있다.
