Summary:PURPOSE: A creamer for coffee with the reduced protein content is provided to prevent the flavor loss and the decrease of the emulsion stability when suing an alternate agent as an emulsifier. CONSTITUTION: A creamer for coffee with the reduced protein content contains an emulsifier for replacing 25~35% of protein taking 2.5~3.5wt% of the creamer. The emulsifier contains 2~10wt% of diacetyl tartaric (acid)ester of monoglyceride, 60~80wt% of mono-and di-glyceride, and 10~30wt% of sodium stearoyl lactylate.
