Summary: | PURPOSE: A mineral-enriched creamer and a manufacturing method thereof are provided to remove the usage of an emulsifier inside the creamer, and to prevent the aggregation phenomenon of fat globules. CONSTITUTION: A manufacturing method of a mineral-enriched creamer comprises the following steps: mixing carbohydrate with sodium caseinate or casein, and adding purified water for dissolving; adding phosphate to the solution, and inserting vegetable oil for dissolving; inserting a milk mineral to the final solution and homogenizing into 2,500~3,000psi; and drying the homogenized final solution in 185~210deg C. The content of the creamer is 15~40wt %of vegetable oil, 45~80wt% of carbohydrate, 0.5~6wt% of protein, 0.5~3 milk mineral, and 0.5~2wt% of phosphate. |
