Summary:PURPOSE: A method for producing 20(S)-ginsenoside Rg3 in high yield is provided to economically produce 20(S)-ginsenoside Rg3 and to develop various therapeutic agents. CONSTITUTION: A method for producing 20(S)-ginsenoside Rg3 comprises: a step of mixing pectinase with hot water extract or ethanol extract of white ginseng in a ratio of 1.0:0.6-1.0:1.2(w/w) at pH 4.0-6.0 and 30-55°C for 20 to 40 hours; a step of adding cellulose and reacting at pH 4.0-6.0 and 30-55°C for 24-40 hours; and a step of collecting 20(S)-ginsenoside Rg3 from the reactant.
