CONSTITUTION: A carbohydrate food comprises 50 to 90% by weight of starch power, 1 to 40% by weight of powder and an extract of plants containing polyphenol based material or bioflavonoid based material and 1 to 40% by weight of powder and an extract of one or more plants selected from sesame seeds, Zizyphi Fructus, carrot, pumpkin, dried grapes, green onion, onion, garlic, red pepper, cabbage, Chinese cabbage, radish leaves, persimmon leaves, buckwheat leaves, green tea leaves, eggplants, Lycium chinense leaves and fruits, citrus peel, celery, broccoli, cauliflower, tomato, chicory and spinach. The starch powder is one or more selected from wheat flour, rice flour, barley flour, corn starch, potato starch, sweet potato starch and tapioca starch. 본 발명은 폴리페놀계 물질 또는 바이오플라보노이드계 물질을 포함하는 식물의 분말 또는 추출물을 유효성분으로 포함하는 지질대사 개선 및 항비만용 탄수화물 식품에 관한 것으로, 폴리페놀계 물질 또는 바이오플라보노이드계 물질을 다량 함유하는 식물의 분말 또는 추출물을 제조한 뒤 쌀가루, 옥수수전분가루, 감자전분가루, 고구마전분가루, 타피오카전분가루 및 밀가루에 상기에서 얻은 식물 분말이나 추출물을 첨가하여 국수, 우동, 칼국수, 빵, 피자피, 만두피, 과자, 스파게티국수, 라면, 씨리얼 등의 탄수화물 식품을 제조하고 밀가루와 쌀가루의 혼합물에 상기에서 얻은 식물 분말이나 추출물을 첨가하여 혼합국수를 제조한 뒤 상기에서 제조한 국수 및 라면의 지질대사 개선 및 항비만 효과를 조사함으로써 지질대사 개선 및 체지방 감소 효과가 뛰어난 탄수화물 식품을 제공할 수 있으므로 식품산업상 매우 뛰어난 효과가 있다.
