Summary:PURPOSE: To provide a method and a device for evaluating quality of wash-free rice, capable of classifying the wash-free rice by accurately analyzing its components and sensitively evaluating its taste and the like. CONSTITUTION: This device is provided with an excitation light source 6 to irradiate excitation light to an object to be measured, an object holding means 5 to hold the object to be measured at a measuring position, a light intercepting means 7 to acquire luminance of self-fluorescence obtained from transmitted light and reflected light from the object to be measured, an arithmetic and control means to compute a quantitative rate of each part of an excipulum, an aleurone layer and an albumen layer and to compute quality or the taste value of the wash-free rice, and a display means to display the value computed by the arithmetic and control means. 무세미에 여기광을 조사하여 얻어지는 자가형광의 휘도 수준에 의해 무세미의 표면에 부착되는 외피층, 호분층 및 배유층의 비율을 식별하여 이 무세미의 품질 또는 식미를 평가한다.
