Summary:PURPOSE: Provided are a novel exochitinase gene derived from a Cellulomonas sp. G13 strain, the amino acid sequence of a protein encoded thereby, a method for manufacturing a recombinant exochitinase by cloning the same gene, and a method for manufacturing a chitin monomer of NAG using the manufactured exochitinase. CONSTITUTION: The nucleotide sequence and the amino acid sequence of the exochitinase gene are represented by SEQ ID NO:1 and SEQ ID NO:2 respectively. A recombinant exochitinase is manufactured by culturing a transformant transformed with an expression vector including the exochitinase gene. The recombinant exochitinase is used for the manufacture of N-acetyl glucosamine from chitin, disaccharide of NAG, trisaccharide of NAG and oligosaccharide at 55 deg.C and pH 6.0.
