Summary: | PURPOSE: A process of preparing dried products of external starch-containing fruit or vegetable concentrates by roller drying of external starch-containing fruit and/or vegetable concentrates and comminuting is provided. Whereby, dried products can be reconstituted with hot or cold aqueous liquids to form fruit pulps or vegetable pulps. CONSTITUTION: External starch-containing fruit or vegetable concentrates are subjected to roller drying to produce flakes. The flakes are agglomerated with fruit concentrates or vegetable concentrates to produce an agglomerate. The agglomerate is steamed and simultaneously heat-treated at 65 to 95deg.C for 20 min to 12 hr or, alternatively, heat-treated to the desired final water content after gently drying, wherein the external starch is potato starch and used in an amount of 10 to 60% by weight and the fruit is tomato.
외부-전분-함유 과일 또는 야채 농축물의 건조 산물 제조에서, 이 산물은 과일 과육 또는 야채 과육을 형성하기 위해 고온 또는 저온 수용액으로 재구성될 수 있다. 건조 산물은 외부-전분-함유 과일 및/또는 야채 농축물을 롤러 건조하고 플레이크 제조를 위해 분쇄시켜 제조된다. 플레이크는 과일 농축물 또는 야채 농축물과 한 덩어리가 되어 응집물을 만든다. 응집물은 증기 처리되고 원하는 최종 수분 함량을 위해 동시에 열 처리되거나 부드럽게 건조된 다음 열 처리된다. |
