The present invention relates to a sheath device including a serrated blade, which is designed to allow an object to be cut to be stably inserted into a lower part of a blade by manufacturing a sheath in a serrated shape. The sheath device including a serrated blade comprises: a conveyor unit which is configured to move meat which is an object to be cut to form a sheath; and a sheath forming part which is installed at the end of the conveyor unit and receives the object to be cut moved by the conveyor unit, to form a sheath on the upper surface thereof. 본 발명은 칼집의 형상을 톱이 모향으로 제작하여 피절단물이 고기가 칼날 하부로 안정적으로 인입될 수 있도록 구현한 톱니 형상의 칼날을 포함하는 칼집 장치에 관한 것으로, 칼집이 형성될 피절단물인 육류를 이동시켜 주기 위한 컨베이어부; 및 상기 컨베이어부의 단부에 설치되며, 상기 컨베이어부에 의해 이동되는 피절단물을 전달받아 상면에 칼집을 형성시켜 주는 칼집 형성부;를 포함한다.
