Summary:In a manufacturing method of semi-dried sweet potatoes using a steaming technique according to one aspect of the technical idea of the present disclosure, the manufacturing method of the semi-dried sweet potatoes comprises the following steps of: peeling, cutting, and washing the sweet potatoes; putting the sweet potatoes into a steamer to perform primary steaming; frozenly storing the primarily steamed sweet potatoes; secondarily steaming the frozen sweet potatoes using high-temperature steam; molding the secondarily steamed sweet potatoes into a preset shape; and drying and cutting the molded sweet potato and packaging the sweet potatoes in a product-specific container. The present invention is to provide the manufacturing method of the semi-dried sweet potatoes having a high sugar content and low calories through primary and secondary steaming to secure product preference. 본 개시의 기술적 사상의 일측면에 따른 증숙 기법을 활용한 반건조 고구마 제조 방법에 있어서, 상기 반건조 고구마 제조 방법은, 고구마를 탈피, 절단, 세척하는 단계; 상기 고구마를 찜기에 투입하여 1차 증숙을 진행하는 단계; 상기 1차 증숙된 고구마를 냉동 보관하는 단계; 상기 냉동 보관된 고구마를 고온 스팀을 이용하여 2차 증숙을 진행하는 단계; 상기 2차 증숙된 고구마를 미리 설정된 모양으로 성형하는 단계; 및 성형된 고구마를 건조 및 절단하여 제품 전용 용기에 포장하는 단계를 포함할 수 있다.
