Summary:The present invention relates to a composition for improving liver function containing a Hovenia dulcis fruit extract fermentation product as an active ingredient and a preparation method thereof. In the present invention, a mixed fermentation product is produced by primarily fermenting the Hovenia dulcis fruit extract with Bacillus subtilis, and secondly fermenting the primarily fermented Hovenia dulcis fruit extract with lactic acid bacteria, wherein the fermentation product produces γ-polyglutamic acid (γ-PGA), gamma-aminobutyric acid (GABA), and tyrosine, and has a large amount of mucilage and high consistency. The fermentation product improves effects on the weight loss due to alcohol, reduces activities of aspartate aminotransferase (AST) and alanine aminotransferase (ALT), and can reduce blood lipid. Further, according to the present invention, the fermentation product of the Hovenia dulcis fruit extract can be useful as a functional material by preventing and inhibiting liver lesion and steatosis through increased gene expression for alcohol dehydrogenase, antioxidant enzymes, and proteins involved in oxidation of fatty acids, and through inhibition of the gene expression for proteins involved in adipogenesis, thereby improving liver function. 본 발명은 헛개나무 열매 추출 발효물을 유효성분으로 함유하는 간 기능 개선용 조성물 및 이의 제조방법에 관한 것으로, 본 발명에서는 헛개나무 열매 추출물을 고초균으로 1차 발효 후, 젖산균으로 2차 발효하여 혼합 발효물을 제조하였으며, 상기 발효물은 감마-폴리글루탐산(γ-PGA), 감마-아미노뷰티르산(GABA) 및 티로신을 생산하고, 많은 양의 점질물과 높은 점조도를 가지는 것을 확인하였다. 상기 발효물은 알코올에 의한 체중 감소를 개선시키고, 아스파라진산 아미노전이효소(AST) 및 알라닌 아미노전이효소(ALT) 활성을 감소시키며, 혈중 지질을 감소시킬 수 있다. 또한, 알코올 탈수소 효소, 항산화 효소 및 지방산 산화에 관여하는 단백질의 유전자 발현 증가 및 지방생성에 관여하는 단백질의 유전자 발현 억제를 통해 간 병변 및 지방증을 예방 및 억제하여 간 기능을 개선시킬 수 있는 바, 본 발명의 헛개나무 열매 추출 발효물은 기능성 소재로서 유용하게 활용될 수 있다.
