Summary: | The present invention relates to a method for producing a concentrate of fruits and vegetables, which is a novel method enabling production of the concentrate ensuring high extraction yield, economic feasibility, little nutrition loss, and cleanliness, thereby exhibiting excellent marketability. To this end, the method for producing the concentrate comprises the following steps: cleaning raw ingredients; preparing a primary treatment solution by decomposing the raw ingredients with breakdown enzymes; preparing a secondary treatment solution by heating the primary treatment solution; acquiring only liquid by compressing the secondary treatment solution; filtering the acquired liquid with a microfilter; and concentrating the filtered liquid.
본 발명은 추출수율이 높으면서도 경제적이고, 영양파괴도 적고 위생적이여서 상품성이 우수한 농축액을 제조할 수 있는 새로운 방식이 과일 및 과채류 농축액 제조방법에 관한 것이다. |
