Summary:PURPOSE:To obtain an economically excellent food useful as a snack cake, etc., without fear of reduction in quality, by extracting and de-fatting nuts by the use of carbon dioxide in a specific state as a solvent to separate lipid and adding spices, etc., to the nuts. CONSTITUTION:Lipid of nuts or beans is extracted and de-fatted by the use of carbon dioxide (e.g. 31 deg.C at 72.9atm) in a subcritical or supercritical state and the lipid is separated, various kinds of spices are added to and impregnated into de-fatted nuts or beans to give the aimed food.
