Summary:PURPOSE:To recover carotene at a high concentration in high yield even from an oily substance containing extremely small amount of carotene, by adsorbing a carotene-containing oily substance to a resin such as polyacrylate resin, removing the oily substance and eluting the adsorbed carotene. CONSTITUTION:A carotene-containing oily substance is made to contact with a polyacrylate resin or polymethacrylate resin to effect the adsorption of carotene and the oily substance to the resin. The resin is then brought into contact with an alcohol (preferably 1-4C mono-alcohol) which does not cause the elution of carotene. The alcohol-soluble oily component existing in the oily substance is exclusively dissolved in the alcohol and separated from the mixture. After separating the oil component, the resin is made to contact with a hydrophobic solvent capable of easily dissolving carotene (preferably hexane, chloroform, petroleum ether, etc., or their mixture, especially hexane when the obtained carotene is to be used as a food additive) and the eluted carotene is separated.
